White Balsamic Vinaigrette with Fresh Mint1/4 cup white balsamic vinegar
3/4 cup extra-virgin olive oil
1/4 cup finely chopped fresh mint
salt and pepper to taste
Whisk together the vinegar and olive oil. Whisk in the mint. Season to taste with salt and pepper. The vinaigrette keeps, covered, in the refrigerator for 2 days.
