Mango Chutney
Makes about 2 cups

1 large mango
1/4 cup apple vinegar with honey
1/2 cup light brown sugar
1 cup water
1/2 teaspoon shelled cardamom seeds
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
2/3 cup golden raisins
2 cinnamon sticks

1. Peel the mango, remove the pit, and cut flesh into large chunks.
2. Place mango chunks in a saucepan, and add all the remaining ingredients. Stir well. Place over high heat and bring to a boil, then reduce heat and bring to a simmer. Simmer for 15 minutes. Let cool.

Makes about 2 cups
