This is a terrific uncooked pasta sauce, easy to make and brimming with flavor.1/2 cup canned tuna packed in olive oil
1/4 cup minced sun-dried tomatoes
8 kalamata olives, pitted and minced
2 tablespoons lemon juice plus additional for squeezing on pasta
2 teaspoons extra-virgin olive oil
2 tablespoons very finely minced fresh parsley
1. Drain off the olive oil from the canned tuna, and place the tuna in a small bowl. Add the sun-dried tomatoes, olives, lemon juice, and extra-virgin olive oil. Mash together with a fork until fairly smooth. When ready to serve, blend with 3/4 cup of hot cooking water from the pasta pot.
2. In a large bowl, toss the tuna sauce with hot pasta. (If the pasta with sauce seems a little dry, add a little additional cooking water.) Divide pasta among 4 to 5 individual bowls. Squeeze a little additional lemon juice on the pasta in each bowl, and top with the finely minced parsley.
