Delicious on grilled fish and grilled meats
1 dried chipotle chili (or enough to yield 1 teaspoon ground chipotle)
1 tablespoon coarse salt
1. Cut the chipotle open with scissors, and remove stem and seeds. Cut the chipotle into small pieces and grind in a spice grinder until finely ground.
2. Combine the ground chipotle with the coarse salt in a small bowl.
This terrific salt, flavored with smoked chilies, taste great on tortilla chips or even potato chips; it's also delicious on grilled fish and grilled meats. Makes a heaping tablespoon
