Here's a creative, offbeat version of an Indonesian sambal
1 tablespoon shrimp paste
1/2 tablespoon finely minced garlic
24 kumquats, halved
3 tablespoons lime juice
1. Place a heavy skillet over moderately high heat, and add the shrimp paste. Dry-fry on both sides for a total of 2 minutes. Add the garlic, stir briefly, and place mixture in a food processor.
2. Add the kumquats and lime juice. Pulse until the mixture forms a coarse paste. Let rest for a few hours before serving.
