Basil-Rubbed Toasts
For Bouillabaisse

18 round slices of French bread, each about 1/2 inch thick
2 large garlic cloves, cut
handful of fresh basil leaves

Heat oven to 250 degrees. Place the bread slices on a baking sheet, and bake, turning occasionally, for 45 minutes. When done, rub each slice with a cut side of garlic and rub with torn basil leaves. (Work carefully, because the toasts will be brittle. The toasts will pick up a rich green color.)

Makes 18 toasts
