Spain's Catalan region has been getting a lot of attention lately thanks to its incredibly fresh and flavorful cuisine. These tapas from Conservas Ortiz are a case in point: line-caught Bonito del Norte tuna is simmered in cream sauce, stuffed into chargrilled piquillo peppers and coated with a light tomato sauce. Heat lightly, serve on toast points and enjoy.
