If you've never tried posole, this is a must. Posole is a hearty stew made of pork (we like to substitute wild boar and pheasant sausage), hatch chiles, spices and hominy (dried corn in which the outer kernel has been removed). This mix of dried, lime-slaked, heritage white and blue corn is a Southwestern favorite and traditional Christmas dish. Soak the posole, add your own pork, spice and cook until done. We love it as a main dish, served with warm, flour tortillas and guacamole.
