When we asked the legendary Press restaurant in St. Helena, California, which bourbon they use in their renowned Press Manhattan, they were adamant in their answer: Bulleit and only Bulleit. While Press stocks other fine bourbons, their celebrated Manhattan requires real Kentucky bourbon with the highest content of rye allowed (approximately 30%). Other bourbons use more corn, but Bulleit is rich in rye, revealing a clean, honeyed nose with a long-lasting finish of oak.
