Zampone, a specialty of Modena, the city of fine sausages, has been known at least since the 1500's. It consists of a whole deboned trotter (front leg of pork) stuffed with pork garlic sausage. Traditionally served for New Year's Day, on a bed of lentils. It is popular throughout the winter. Ours is from domestically raised Berkshire pigs, hand sewn and ready to poach. Shipped frozen.
