Southerners have always taken their hams seriously. A 1926 law stated that Genuine Smithfield Hams were to be cured, treated, smoked and processed in the town of Smithfield, Virginia exclusively. They are still dry-rubbed with salt and pepper, smoked with hickory and applewood and then aged for at least a year. Eat it sliced thin and served with biscuits. Delicious! USA
