Our duck liver is prepared in the classic torchon style, in which the foie gras is seasoned with port wine, wrapped in a kitchen towel or torchon, and cooked sous-vide in order to achieve optimal flavor and texture. It is at its best when served chilled in 1/4" slices with crusty French bread, cracked pepper and a little sea salt.
