Our duck foie gras is seasoned with Port wine, wrapped in a kitchen towel or torchon, and cooked sous-vide in order to achieve optimal flavor and texture. It is at its best when chilled, sliced in 1/4" medallions, and served with crackers, cracked pepper and a little sea salt.

      I would actually give this foie gras 3.5 stars. Texture was phenomenal, but it was a bit on the bland side. Very mild foie gras which I'm sure some people appreciate. I like my foie gras a bit more on the robust side. For the price, I would not recommend.

              This is a lovely fois gras. It is one of the milder fois gras that I have had, and I think it is best served with a smoked salt (sel fumé) which I think D&D also has. But a little herbal or salted sprinkle brings out its buttery richness without hiding its delicate fowl notes. It is a very nice fois gras.

              It was served as a first course with brioche toast points, and 3 different sea salts. Because I did find it just a bit bland I also served a rose petal with a teaspoon of rose jam on the plate to add just a little creativeness to the course.
