Amablu Blue from the caves of Faribault Dairy in Minnesota, a small wedge robust in flavor with a creamy yet crumbly texture. Cottonwood River Cheddar is a new age cheddar made from raw milk, aged for eight monthswith a slightly sweet note, almost citrus flavor. Fayette Little Darlinghand made in small batches in Wisconsin, this is a natural rind single creme tomme. A wonderful table cheese with a blue grey mold and white to gold inner past. Baetje Bloomsdale is a mold ripened cheese rolled in a mixture of ashe and salt, smooth creamy paste with aromas of earthy mushroom and flavor notes of toasted sunflower seeds. Pleasant Ridge Reserve is a superior cave aged farmstead cheese created in Wisconsin. A gruyere-like wheel with natural rind.
