Cherry Tomato Salad with Herbs and Champagne Vinaigrette


Use both red and yellow cherry tomatoes for a colorful splash. Good cherry tomatoes are now available most of the year, either foreign or hothouse in origin. Serves 6

  • 6 Serves

Ingredients:

  • 2 pints (about 1 and a half pounds) red or yellow cherry tomatoes, or a combination of both
  • 6 small Kirby cucumbers, peeled, halved and thinly sliced
  • one quarter Vidalia or other sweet onion, very thinly sliced
  • 1 quarter cup coarsely chopped chives
  • 2 tablespoons minced tarragon leaves
  • 2 tablespoons coarsely chopped mint leaves

Directions:

  1. In a large bowl, combine all the ingredients with the Champagne Vinaigrette and toss to coat.
