When Montezuma first encountered Cortez, he offered him a drink made from cocoa seeds and cinnamon. The recipe went back to Spain where it was sweetened with sugar, and then on to Modica, Sicily, where the cocoa was milled by hand and formed into a bitter cocoa paste. Today in Modica, cocoa bars are still handcrafted using the same traditional production methods, and the results are to be savored. These dense, rough-textured bars are flecked with shiny sugar crystals and have a deep, rich and intense flavor.
