One of El Bullitar’s goals was to broaden the range of possible textures in cooking—a goal that was achieved with Texturas. It’s an insider’s secret that is now available for you to explore in your own home. These Texturas allowed the brothers to prepare new recipes no one had ever been able to imagine by allowing them to control the gelification of a liquid to form spheres of different sizes, ranging from as small as caviar to as large as an egg.
