Much of the cinnamon found on your grocer's shelf is actually cassia—a fairly common variety. This, on the other hand, is true Ceylon cinnamon from Sri Lanka, gently hand harvested from the tender inner bark of young cinnamon tree shoots, dried in the sun, and rolled into fragrant, golden-brown quills.
