Comments about Epazote:
A very traditional herb in central Mexico. Use in sauces and with beans that have long simmering times. Flavor is released slowly.Use also in quesadillas. Best with Oaxaca or Smoked Monterey Jack cheeses. You may need to soak the herb a bit before you use in in quesadillas.
