    Comments about Galangal:

    This is the spice you taste in Tom Kha, not ginger. This aromatic cousin is more delicately flavoured and works well as a substitute any time for ginger, particularly in mulled wine or cider. I keep at least three cans during the fall and winter. Grind this on your nutmeg grater or chop off a bit and add the spice to hot water for a soothing drink when you come in from the cold.
