Demerara is a type of unrefined, granulated brown sugar that is made by pressing shredded sugar cane to extract the juice, which is then boiled to remove the water. The coarse golden crystals that are left behind retain much of the flavor of the cane and are delicious on cereals and yogurt, in coffee, or as a glaze for ham. Its texture also makes it ideal for decorating cookies and topping desserts.
