One of the greatest traditions in Italy is the annual tasting of freshly pressed olive oil. Unlike a nuovo or novella, this first pressing oil is filtered as required to qualify as a Laudemio. A bold, robust oil with a fruity nose, best served on roasted meats or grilled fennel.
