Tea Compotes like this have a long tradition in Northern Italy. Ours, made in small batches in Mantovane, is made of slowly cooked plums, cane sugar and smoked black tea. It's superb when paired with Torta la Serena or Asiago Stravecchio cheeses, or served as an accompaniment to duck breast.
