You can taste the fresh flavor of the fully ripened, heritage tomatoes that were pressed to produce this vinegar. It makes a perfect salad dressing when blended with extra virgin olive oil, and is ideal for giving flair to Mediterranean dishes. One of our favorite ways to enjoy it is to slice zucchini, peppers and artichoke bottoms; marinate them with the vinegar, olive oil, salt and pepper; and serve as an accompaniment to roast fish or filet of beef.
