Mesquite trees, also known as Algarroba, grow wild in large forest areas in the coastal regions of north Peru. Their yellow and red pods are about the size and shape of green beans and, when dried and milled, create a protein-rich, gluten-free powder with limitless uses. It imparts a warm, sweet, slightly smoky flavor to foods, and enhances the flavors of cinnamon, chocolate and coffee. It can also be used to sweeten juices without raising blood sugar levels and, when blended with other flours, used in cooking and baking.
