Chitarra (literally guitar strings) are long, square strandsof spaghetti with squared-off corners (like tagliolini, but with the thickness of spaghetti). This spaghetti gets its deep black color naturally - Genuine squid ink tints the noodles a deep black and tinges them with a sea-salt tang. Filotea makes their artisanal pasta using a blend of 00 flour, durum wheat semolina and fresh, free range eggs. Dried at lower temperatures over a longer period of time than most other dried pastas, Filotea offers better flavor, a more tender, fluffier texture, and faster cooking times. Because they make their pasta with a rougher surface, sauce will cling to the noodle just as it should.
