Gianluigi Peduzzi creates his exemplary pasta from locally grown stone-ground durum wheat semolina, pure mountain spring water and a healthy dose of experience. Lesser pastas are routinely flash-dried; Gianluigi's is air-dried for 56 hours. (No more; no less.) Because it's extruded through the same hand-carved bronze dies his grandfather used a century ago, the pasta has a slightly coarse texture that coyly embraces sauce. Italy
