Balsamic vinegar. Oh, how we love its dark color, succulent-yet-pungent sweetness and its intense fruity undertones. We enjoy it on salads. It makes our tomatoes sing. And when we soak it in our favorite buffalo mozzarella; we could be accused of being a bit giddy. This is a remarkable example of balsamic vinegar, aged in barrels made from various woods including, chestnut, mulberry, juniper, oak and cherry.
