Don't confuse Vincotto with a Balsamic. It is instead an elixir, sweet and smooth with subtle and pleasant flavors with nuances of prunes, spices and heady grape components and it is not as woody as Balsamic. Since we discovered its silky flavors, we have learned to use Vincotto as a condiment drizzled sparsely over game - our favorite - or with roasted meats, salads and aged or strong cheeses. Italy
