Years ago company founder, John Boyajian, discovered a woman in Vermont selling homemade maple vinegar at a roadside table. The vinegar was exceptional. The sugar maker was not interested in producing large quantities but was happy to share her recipe. This is an excellent product for making an agro dolce. Create fig-cranberry compote to compliment your meats or just drizzle on your salads. A New England experience; this balance of sweet and sour will impress your guests. USA

    This vinegar has a subtle flavor that goes with everything. I use it to add just a touch of sweetness and tartness to salad dressings and mayonnaise, where I mix it 50/50 with lemon. I like to make my mayo with olive oil, and this mitigates a strong olive oil flavor. I won't use sugar or sweeteners in salad dressings ever, but this acts as a kind of "softener" rather than sweetener. Wonderful!
