Years ago company founder, John Boyajian, discovered a woman in Vermont selling homemade maple vinegar at a roadside table. The vinegar was exceptional. The sugar maker was not interested in producing large quantities but was happy to share her recipe. This is an excellent product for making an agro dolce.
