At Spain's family-owned Cava Agustí Torelló Mata, they know that the better the wine used, the better the vinegar. This barrel-aged, naturally fermented vinegar is made from one of their sweet cavas (Spanish sparkling wines), acidified for 6 to 8 months in American Oak barrels before being aged a minimum of one year in French Oak to develop bright fruit overtones.
