A Tuscan-style T-bone steak similar to a Porterhouse, our colossal USDA Prime Bistecca Fiorentina is dry-aged, a process through which the meat will acquire a darker exterior look as well as a fuller beef "nose" and taste. For best results, sear it on both sides then stand upright and grill over indirect heat. Serve it the Italian way; with nothing but freshly cracked black pepper and a drizzle of smoked olive oil.
