Tomato Chutney
Tomato Chutney

1 1/4 pounds tomatoes
1/4 cup chopped onions
1/2 teaspoon minced garlic
1/2 cup light brown sugar
1/4 cup apple vinegar with honey
1 teaspoon ground ginger
1/4 teaspoon turmeric
1/2 cup golden raisins

1. Peel and seed the tomatoes. Cut into large chunks.
2. Add the tomato chunks to a saucepan, and add all the remaining ingredients. Stir well. Place over high heat and bring to a boil, then reduce heat and bring to a simmer. Simmer for 30 minutes. Let cool.

Makes about 1 1/2 cups
