Texas-Style Barbecue Sauce
Texans also like a tomato-based barbecue sauce, filled with the flavors of the southwest.

Ingredients:
1/4 cup vegetable oil
1 cup minced onion
1/4 cup finely chopped celery
2 tablespoons minced garlic
1/2 cup cider vinegar
1/4 cup distilled white vinegar
3/4 cup ketchup
1/2 cup tomato purée
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 teaspoon hot paprika
1 tablespoon plus 1 teaspoon coarse salt

Directions:
1. Heat the vegetable oil in a heavy saucepan over moderate heat. Add the onion, celery, and garlic, and cook for 5 minutes, or until slightly soft.
2. Add all the remaining ingredients and 1/2 cup of water, and simmer sauce, uncovered, for 20 minutes, or until it is quite thick. Purée in blender until smooth. (If you prefer an extra-smooth sauce, pass mixture through fine sieve.)

Texans also like a tomato-based barbecue sauce, though theirs is usually less tomatoey than the Kansas City sauce. It's also less sweet, less thick, and filled with the flavors of the southwest. Makes about 3 cups
