Kentucky Black Barbecue Sauce
This is one of the least-known- but one of the most delicious- Southern barbecue sauces

1/4 cup plus 2 tablespoons distilled white vinegar
1/2 cup plus 2 tablespoons Worcestershire sauce
2 tablespoons plus 1 teaspoon light brown sugar
2 teaspoons lemon juice
1/4 teaspoon ground black pepper
1/4 teaspoon Tabasco sauce
a scant 1/4 teaspoon ground cloves
a scant 1/4 teaspoon ground nutmeg
1/2 teaspoon coarse salt

1. Heat the vegetable oil over moderate heat. Add the onion and cook for 5 minutes, or until onion is soft and light golden brown.
2. Add the remaining ingredients, and simmer, uncovered, for 15 minutes. (The sauce will thicken slightly.)
