Herring Smørrebrød with Apples and Beets
If you've turned up your nose at herring fillets, try this terrific sandwich in which the herring combines beautifully with other ingredients

Ingredients:
4 thin pickled herring Wllets (about 3/4 pound total)
1 small potato, peeled, boiled, and cut in small dice
3 large slices pickled beets, cut in small dice
3 tablespoons chopped onion
2 tablespoons chopped dill pickle
1 small apple, peeled and cored
2 tablespoons mayonnaise
1/2 stick (1/4 cup) butter
6 slices of dark bread
12 green-leaf lettuce leaves
freshly ground pepper to taste
dill leaves for garnish

Directions:
1. Cut the herring fillets into pieces roughly 1/2 inch by 1/2 inch. Place in a bowl, and mix with potato, beets, onion, and pickle. Chop the apple into small dice and add to the bowl. Add the mayonnaise and mix well.

2. Spread 1 teaspoon of butter on each of the bread halves. Top each half with a lettuce leaf that overlaps slightly on all sides. Divide the herring mixture among the bread halves, and sprinkle with freshly ground pepper. Garnish with dill leaves.
