Chicken, Apple, and Sage Sausages
This is our best-selling fresh sausage

1 1/2 pounds skinless, boneless chicken thighs and breast
1/4 cup fresh orange juice
3/4 cup slightly tart apples, peeled and cut into 1/2-inch chunks
1 1/2 tablespoons chopped fresh sage
1 tablespoon Calvados
salt and freshly ground pepper to taste

Pass the chicken twice through a meat grinder, using the plate with the widest holes. Mix in orange juice, apples, sage, and Calvados, and season with salt and pepper. Test a small amount of the mixture in a sauté pan for seasoning. Proceed with sausage stuffing (directions precede).
