This delicious, fine-textured sausage, with its slightly cheesy taste, is very popular at the store.
2 1/2 pounds pork (about 70 percent meat and 30 percent fat), cut into 2-inch cubes
1/2 pound fresh spinach, chopped
1 cup pine nuts, chopped
1 tablespoon minced fresh garlic
1/2 cup Pecorino Romano, freshly grated
1/2 cup ricotta
salt and freshly ground pepper to taste
Pass the pork 3 times through a meat grinder, using the plate with the widest holes. Mix in spinach, pine nuts, garlic, pecorino Romano, and ricotta, and season with salt and pepper. Test a small amount of the mixture in a sauté pan for seasoning. Proceed with sausage stuffing (pull directions on Dean & DeLuca web).
