North Carolina Barbecue Sauce, Western-Style
A good sauce if you like your barbecue to be unimpeded by lots of complex flavors

Ingredients:
1 tablespoon butter
1/3 cup minced onion
1/2 cup ketchup
1/4 cup tomato paste
1/4 cup water
1/2 cup lemon juice
1/2 cup cider vinegar
3/4 cup light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons Tabasco sauce
2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper

Directions:
1. Melt the butter in a heavy saucepan over low heat, and add the onion. Cook until slightly soft, about 5 minutes.
2. Add all the remaining ingredients, and simmer sauce over moderate heat for 20 minutes. (The sauce will thicken slightly.)

The barbecue sauces of North Carolina are amazingly varied. West of Raleigh, tomato-based sauces rule, just as they do in Kansas City and Texas. The typical western Carolina sauce relies heavily on ketchup, is very sweet, and features a heavy dose of vinegar. The following sauce is relatively simple...a good sauce if you like your barbecue to be unimpeded by lots of complex flavors. Makes about 2 cups
