There just in front of you is the World’s Best Mac and Cheese. A slight smile creeps into the corner of your lips as you take it out to put it in the oven. The smell of bubbly, melting, gooey cheese that makes your stomach growl and your mouth begin to water. When you pull it out of the oven you inhale deeply and savor the aroma, letting the warmth begin to melt away the stress of your day.

The first thing you notice as you take it out of the oven is the way that the cheese has become a creamy heaven blanketing the Penne Rigate in its divine richness. You take a moment to stir it, working in the chili powder that adorns the top and notice how the cheese is clinging to every part in the pasta. Unable to resist any longer you take a bite, and there is a veritable flavor explosion that rockets your mouth. You feel the tang of the Flagship and Just Jack Cheeses coat your mouth as the hint of spice from the chipotle peppers, garlic and onion powders awaken every taste bud to the journey they are about to partake. As you bite into the pasta you realize it is perfectly al dente in texture and delight in the cheese that has clung to every groove as if it were a life raft among the ocean of cheese that it was swimming in. Then you sigh and realize that in one moment, the day’s stresses have started melting away.

As you pour yourself a glass of Brewer-Clifton Chardonnay and make your way to your favorite spot on the couch, that feeling begins to hit you. The feeling that you are being enveloped by a warm, fuzzy blanket and a serene sense of calm and comfort takes over. A realization dawns and the meaning of comfort food becomes instantly clear.

We head northeast to New England to Cundy’s Harbor, Maine, a small community nestled among miles and miles of the Atlantic coastline. The sea is sprinkled with lobster boats, buoys and fisherman. Lobstering has passed from generation to generation and the same traditions and ideals are brought to us by the Hancock Gourmet Lobster Co.

The great people at Hancock Gourmet Lobster Co. are the geniuses behind some of my favorites at Dean & DeLuca where lobster is the star, including our Lobster Mac & Cheese, Lobster Stew and Wildberry Crisps. We include two varieties that are packed separately. The first lobster salad features the crunch of celery and zest of lemon that complements the crisp, sea flavor of the lobster meat. The second salad is prepared with tarragon that enhances the earthy flavor giving a whole new meaning to land and sea. Still, I am unable to decide which is my favorite and luckily you don't have to.

It doesn’t stop there because the Lobster Rolls would not be complete without the signature split-top rolls, which are included. Slightly buttered and toasted, they are the perfect vessel for you to place your lobster salad. Don’t believe me? Place an order and you decide!

Beginning with a quality product means that you are already off to a great start. Dean & DeLuca's Private Reserve Brandt Beef is my recommendation for those beef lovers looking for the ultimate steakhouse steak at home.

Brandt Beef, based in Brawley, California is a family-owned, natural beef producer. When looking for products that don’t just taste good but aren’t punishing the globe with intensive, unsustainable and potentially cruel farming methods, Brandt Beef leads the way – and any serious beef eater should follow.

Brandt cares about their cattle, raising them on an all-natural, vegetarian diet of corn, sudan and alfalfa grasses, which are grown by the Brandt family on their farm. Given this exceptional level of treatment, Brandt does not need to artificially enhance their product with hormones or antibiotics; you will taste the difference and your guests will thank you for it.

I met Eric Brandt and his young son at his home in San Diego, California. Eric is the son of William Brandt, the owner and co-founder of Brandt Beef. As managing partner of the family business, he embodies the “farm to fork” philosophy which is part of everything Brandt Beef does. Eric explained to me the importance of not only producing a superior quality beef for his customers but producing it in a responsible, humane way. For example, the Brandt fields are protected from mice and insects not by synthetic pesticides but by an owl. This is just one of the ways that Eric and his family are leaving a legacy future generations can be proud of.

Eric inspects and hand-stamps the Brandt Private Reserve Beef for Dean & DeLuca’s butcher shop daily. He sees the relationship between Brandt Beef, Dean & DeLuca and the customer as similar to that of an old-fashioned butcher, where the butcher sources and hand-selects the meat. The search for a purveyor who was as passionate and dedicated to fine, quality food as much as the Brandt family are, is what brought Dean & DeLuca to partner with them as their exclusive online retailer.

Eric believes in his responsibility to customers whether they are a top chef or home cook, to provide a quality, consistent product that is 100% traceable from the farm to the kitchen table. Along with the "field to fork" philosophy, Brandt Beef embraces a "tongue to tail" philosophy too, utilizing the entire animal instead of just the popular middle meats, ensuring nothing goes to waste. This is why when you browse through the selection at Dean & DeLuca, you will find the traditional classics but also ox tail, a key ingredient in rich soups and stews, and the Private Reserve Bavette Steaks, a long but thin cut.
Why on Earth would one need all these different salts?

Salt is salt.

Just like white wine is white wine. Chardonnay is like Viognier.

And red wine is red wine. Zinfandel is like Pinot Noir.

Meat is meat, right? Rib Eyes are like Filets.

Fish is just fish. Tuna is like Halibut.

Get it?

I have always enjoyed making sweet treats ever since I was young and remember baking with my mother and grandmother and enjoying the fruits of our labor.

One of the reasons why the Summertime Cupcakes are so outstanding are the amazing flavors. The Teacake Bake Shop makes these delicious treats from scratch in small batches, just like at home, with farm-fresh dairy, sweet creamery butter, Belgian chocolate, imported Dutch Cocoa and Madagascar Bourbon vanilla. Each cupcake is frosted by hand and decorated with hand-crafted fondant, truly a treat for the eyes as well as the taste buds. My mouth waters every time I describe them to our customers.

The presentation of the Summertime Cupcakes is absolutely flawless. The cupcakes are placed pristinely into a pink gift box held with cleverly-placed cupcake inserts so that you are able to remove the cupcakes in perfect condition.

They are sure to put a smile on your face.

After being cleaned, they are milled into a paste which is then put under pressure to extract the liquid.

Premium olive oil is cold pressed, which means the paste is room temperature and the pressing is done when it’s cold. This technique retains flavor, avoids losing taste, and increases the yield of oil.

Variations
Extra virgin olive oil, which comes from the first pressing of the olives, is the highest quality and contains greater levels of antioxidants. This rich and intense oil is perfect for salad dressings, marinades, and dipping bread.

Virgin oil comes from the second pressing. The term means the olives are pressed with a mechanical technique and without the use of heat, steam, or chemicals.

Regular or pure olive oil is a blend of oils that have been chemically-refined and filtered to neutralize strong tastes and high acid content. This low-quality oil is usually the least expensive and best for frying or when flavor is not crucial.

The color of olive oil depends on the variety of olive and its maturity at the time of harvest. Early-picked olives yield a dark, greener oil, while riper olives produce an oil that is lighter and more yellow in color. The extraction process can also affect color and taste. Greenish oils do not necessarily have a grassy aroma and yellow oils aren’t always buttery.

Flavor
Flavors range from mild and citrusy to spicy and peppery. Factors influencing taste include the type of olive, region, maturity, processing, and age. With more than 200 different varieties of olives, an extensive range of flavor profiles is to be expected. Olive oil is unusual because two qualities that can be questionable in other foods - bitterness and pungency (olives' peppery bite in the back of the throat) - are positive qualities. Another desirable trait is fruitiness and actual olive flavor.

Benefits
At 120 calories per tablespoon, olive oil contains significant vitamins and nutrients that support healthy digestion and are thought to lower blood pressure. According to the Food and Drug Administration, consuming 2 tablespoons per day may reduce your risk of heart disease. Containing a high concentration of monounsaturated fatty acids, the oil also supports good cholesterol (HDL) while lowering bad cholesterol (LDL). In addition to natural health remedies, it can be used in household cleaning along with personal care to moisturize skin, hair and nails.

By: Maggie Radzwiller

Let’s face it, there's an over-abundance of barbecue sauces on the market. But just like beer, salsa, and mustard, we all have one that strikes a chord and makes us think there’s simply no way that we could find one better. You just know that it’ll make a lot of your favorite foods taste even better.

The Dean & DeLuca Black Truffle Barbecue Sauce is just that for me. It’s become something far more than a sauce that I brush on my meat or vegetables near the end of their cooking time. I baste it on seasoned pork ribs, wrapped in foil, oven braised and grilled (yes, I baste more of the sauce on when it hits the grill!) The full flavor of the sauce can be tasted all the way down to the bone.

All of us have a myriad of condiments and sauces in the fridge. How many times have we held them in our hands and tried to remember just how long they’ve been in there? My advice to you is to not buy just one bottle as this one can be savored and enjoyed in a single day. No need to worry about a "best if enjoyed by" date on this bottle.

It can morph into your new favorite marinade by combining it with red wine or sherry vinegar. It’s much lower in carbs than other barbecue sauces but still bullish on the truffles and tomato. Also, try blending it into some ground lamb to discover your next best burger.

Barbecued Pork or Beef Ribs
1 rack of ribs, about 3 ½ lbs., cut in to equal halves
Yield: Dinner for 4 or appetizer for 6
Directions:
Preheat oven to 350 degrees
Double-layer 2 sheets of heavy-duty aluminum foil under the racks
Season meat liberally with Dean & DeLuca Chile Powder Blend

Inextricably linked to fine wine and great food, St. Helena provides a natural home for Dean & DeLuca on the West Coast. From the vineyards that sprawl out in all directions, to the fresh produce that’s grown just a few miles from the store, the community of St. Helena is a culinary epicenter that affects the collective tastes of the nation.

Our St. Helena store is unique in many ways. Much of our produce is grown on local farms, many of our cheeses are made from local artisans and all of the 1400 wines we offer are Californian. This team focuses on Dean & DeLuca's passion for international foods and products, integrating flavors from around the world into their prepared foods. The store also showcases trends that have emerged in local kitchens. Menus and recipes derive their flavor from fresh ingredients and the unparalleled quality manifest in the convergence of Napa Valley and Dean & DeLuca.

What caught my eye was how beautiful the packaging is; each item comes in a cellophane sleeve tied with a satin ribbon. The outside of the box has a vintage photo of a family member, a print overlay and another ribbon. Each order is handmade instead of large batches like other bakeries. I would recommend serving the cookies with Jeni’s Ice Cream to make a cool snack on a hot day. At the corner of Highway 29 and Oakville Crossroad, the current building was established in 1881 as a general store, the Oakville Mercantile, to offer provisions and telegraph service to local farmers. Joseph Phelps purchased Oakville Grocery in 1978 and began the transformation into the modern day gourmet foods stores of today. In 1993 the Oakville building was placed on the National Register of Historic Places and is easily identified by the historic Coca-Cola painted exterior wall. Quite amazing this location has operated continuously since its establishment in 1881.

Oakville Grocery owners and locations have come and gone over the years. Most recently, Palo Alto’s Stanford Shopping Center location, opened in 1988, but recently closed in 2008. A San Francisco location closed in early 2007. Sara, you’ll make the lemon squares? Bill, you’ll have that turkey in the smoker all day, right?”

This summer, if you’re looking for a new standard, look no further. We did a little experimenting and came up with the following recipe for one of our newest butcher shop items.

The Wild Boar Sausages with Apples and Cranberries are plump, robust and were thrilled to be paired with plums, peaches and red onions on the grill. The sausages got crispy and the ripeness of the fruit became intensified with the heat of the grill. What could be better than fresh game flavors with fresh fruit to compliment? The good news is that they’ll be just fine with the potato salad and lemon squares! Hey, if you want to give Mark a pass this year we've got some amazing potato salad available, as well.

Order by July 2nd (3:30pm CST) and we guarantee that you’ll receive your sausages in time for the party. Hurry quanitites are very limited!

When you assemble your kebobs, we recommend that you use two skewers, not just one. It makes the kebobs so much easier to turn on the grill!

Soak your skewers for at least an hour in water to prevent them from burning.

Slice the peach & plum in half and remove pits

If you find red onions that are the same size as the fruit halves, great, if not, cut a larger onion in half

Assemble the kebobs as shown in the photo

Cook on ash white charcoal for about three minutes on each side or until sausages reach an internal temperature of 165 degrees.

Yes, it’s really this fast, fresh and delicious.

How do you expect me to pull this together with the way our schedules are this week? Have you lost your mind?"

Since one of my real lives is that of a caterer, I wouldn’t normally tell you this but I have the perfect solution for the tragic couple.

If you’re reading this blog you already know how to get to the Dean & DeLuca website, but let me guide you to my favorite items that are a mere UPS delivery away.

Okay. You get to the house with minutes to spare. It’s important that the best but simplest to prepare be served first this evening. By the time your guests arrive you have the Terrabianca Italian Antipasti (grilled eggplant, cipollini onions, marinated artichokes and Taggiasca olives) in bowls, served with focaccia and of course Negroni cocktails!

Since you’re still unwinding from your week, I think the Rack of Lamb Meal is the way to go for dinner. Rack of lamb, garlic mashed potatoes and braised artichokes - delish or what? Enjoy your antipasti and cocktails while your dinner is in the oven.

What to drink with dinner? Dean & DeLuca has put together a Pinot Noir Tour that features distinctly different personalities of wine that will allow you to conduct your own wine tasting while you dine. A platter of Daniel Boulud Salmon, Smoked Sturgeon and Smoked Sable. All you’ll need is some lovely dark bread or bagels and cream cheese. Don’t forget the Counter Culture Coffee!

This should help to get you to a good survival point where you can catch up and enjoy your weekend. Take my advice and go out for lunch on Saturday!

A great start to your Saturday dinner are the Southwestern Hors d’oeuvres, paired with my "maggie"ritas and the best guacamole recipe.

Get the freshest veggies from your local farmer's market, if you're not near a Dean & DeLuca. This wine will fully stand up to the task of these flavors.

You will look like the most organized, efficient and talented hosts ever. Your only problem - you may never get rid of the Van Helsings.

"Maggie"ritas
I can’t take any credit because it is the authentic method:
-Equal parts of really good tequila, fresh lime juice and Cointreau (unless you can get your hands on an orange liqueur from Mexico)
-Shake!

Guacamole
-2 ripe avocados, peeled, pitted and smashed (not pureed, leave small chunks)
-1 bunch cilantro, finely chopped
-1 serrano chile, seeds removed, very finely diced
-1 lime, zest finely grated or microplaned and juice
-2 T. red onion, finely chopped
-Salt and pepper to taste
Serves 4

Negroni Cocktails
-Equal parts of a good gin such as No. 209, sweet vermouth and Campari
-Shake and serve with a lemon twist and orange slice
