PAVI Wines was founded in 1998 by Rob Lawson and his wife Pavi. Blending Rob's passion for winemaking and Pavi's passion for her Italian heritage has lead to the production of classic Italian varietals in California. As the winemaker for PAVI Wines, Rob seeks to "capture the true varietal by pairing New World technology with traditional techniques" to create wines that are both fruity and robust in flavor and texture. In addition to the Pinot Grigio and Dolcetto made in Napa Valley, PAVI Wines makes an Italian Pinot Grigio, grown and produced in the Venezie region of northern Italy. Production is currently set at 8,000 cases of the Dolcetto and both Pinot Grigios, all organically grown.
