Leave it to Rob and Pavi Lawson to make a Vin Santo—they are after all, one of the few Napa Valley vintners that have devoted their label to creating only Italian varietals. While we enjoy their easy-drinking Pinot Grigio and Dolcetto, it was their Vin Santo that really captured our imagination and senses. Although made with Semillon, Rob used the Italian technique of drying the grapes out in the sun and the juice for five years in neutral oak. In the bottle, this debut vintage offering reveals a decadent, honeyed nose with sweet flavors of white stone fruit that glide on the palate. WINEMAKER AND PHILOSOPHY: Rob Lawson. Vin Santo unmistakebly has the flavor of historic Tuscany. Its amber color, the aroma, density, structure and sweetness of this Vin Santo creates a bouquet that is very intense, consistent and complex. Reminiscent of rich dried fruits (apricot, plum and peaches), almonds, caramel, vanilla and subtle spices. Its taste is full-bodied, with a bright finish. Thoroughly unique. Van Santo is a great sweet wine and is an excellent accompaniment to fruit-based dessert-whites."
