Champagne Vinaigrette


Champagne elegance in a light and versatile vinaigrette. Makes about 1/2 cup.

Ingredients:

  • 2 tablespoons champagne vinegar
  • 1 tablespoon minced shallots
  • quarter teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • 6 tablespoons extra-virgin olive oil

Directions:

  1. In a medium bowl, whisk together the vinegar, shallots, salt and pepper. Slowly whisk in the olive oil.
