Greg Laketek studied in Italy under a master salumiere. He brought those ancient techniques and knowledge back stateside to open West Loop Salumi in Chicago. Today, we are pleased to bring you an assortment of six salumi made in the old world tradition: strolghino di culatello (pork), wagyu bresaola (beef), finocchiona (with fennel seed), soppressata (dried salami), 'nduja (spreadable prosciutto with Calabrian chili), and coppa (spicy pork).
