The Province of Modena is considered the home of true balsamic vinegar, where experts take the must of grapes, reduce it to a concentrate and then allow it to age like fine wine. Both of these balsamicos are certified as tradizionale (aged for at least twelve years) by the Consortium of Producers of Traditional Balsamic of Modena. It just doesn't get any better than that.
