Grandma Gracie's Shortbread Cookies

This recipe is unchanged from Elisa Marshall’s grandma’s notebook. Marshall is the woman behind Maman, an eclectic and wonderful café and bakery with locations in Manhattan, Brooklyn and Toronto, which serves family-inspired recipes from the south of France and north America. These cookies are full of flavor and love.

  • 3 cups of all-purpose flour
  • 1/2 cup of cornstarch
  • 2 cups icing sugar, divided
  • 1/2 teaspoon almond essence
  • 1lb unsalted butter, (softened)
  • Chocolate chips and orange zest, if desired


  1. Pre-heat oven to 300 °F.
  2. Sift together flour and cornstarch in large bowl. Set aside.
  3. With an electric mixer, whip butter until light and fluffy. Slowly add in one cup icing sugar and almond essence until dissolved and the mixture is smooth. Gradually add flower & cornstarch mixture to the butter mixture.
  4. Add in chocolate chips and orange zest, as desired.
  5. Drop teaspoon size balls onto ungreased cookie sheet.
  6. Bake approximately 15 minutes, or until cookies are firm in texture.
  7. While still warm, roll in icing sugar, coating the entire cookie.
  8. Let cool and enjoy!
