Shaved Red Cabbage Slaw

Light and crunchy, this salad has a bit of bite, thanks to the vinaigrette, and a hint of sweetness lent from apples and raisins. A perfect balance of flavor and texture.

  • ½ head red cabbage, shaved thinly on Japanese mandolin
  • 2 honeycrisp apples, grated and sautéed lightly in olive oil
  • 1 yellow carrot, julienne
  • ½ cup raisins plumped in white wine
  • ¼ cup cider vinegar
  • ¼ cup extra virgin olive oil
  • ½ cup red onion fine diced
  • 1 tbsp. sugar


  • Heat sauté pan over medium heat. Add olive oil and onions and sweat very slowly until tender.
  • Add vinegar and sugar and bring to simmer, take off heat.
  • In bowl, mix cabbage, apples, carrot, and raisins.
  • Pour vinegar mixture over cabbage mix well. Season with salt and pepper and allow to marinate.
  • Finish with chopped parsley.
